The Easiest Gluten-Free Berry Pancakes

Hello breakfast enthusiasts! Today I’ve got a recipe you’re going to go head over heels for. I was scouting the grocery store a few days ago looking for healthier options for the kitchen and came across a variety of flours. Everything from coconut to almond, the options were endless.

Something that caught my eye though was the gluten-free package from Bob’s Red Mill brand. It’a a gluten-free pancake mix featuring a giant stack of flapjacks on the front. I couldn’t resist buying the pouch to try out!

I’ve got to be honest by saying, I’m not a huge fan of pancakes or waffles. Anything too carb-y and sugary just isn’t up my alley. However, I thought I’d put a twist on these bad boys to make them a little more delicious. It was definitely a splurge day and I wanted them to genuinely taste like regular pancakes despite being gluten-free.

Things We Need

1 1/2 cups Bob’s Red Mill Gluten Free Pancake Mix

1 Cup of Milk

2 Eggs

2 Tbsp Vegetable Oil

Blackberries

Blueberries

Bowl

Fork or Whisk

Measuring Cups

Skillet

Start by preheating your skillet to medium heat. Make sure your chosen pan is non-stick so our pancakes don’t fall apart upon completion.

Begin pouring wet ingredients into bowl (eggs, milk, oil). Stir thoroughly until mixture is combined.

Slowly start to pour flour into wet ingredients being sure to whisk when adding to avoid clumps in the batter.

Take a handful of blackberries and add them to the batter. Smash the berries until color turns to a light purple. Feel free to add more if needed.

Once the mixture is thick and smooth take a 1/4 measuring cup and pour a small pancake onto your skillet. Be sure to watch the pancakes as they cook extremely fast (typically a few minutes on each side). Flip pancakes when bubbling is seen and browning is noticeable.

Before plating, add a few blueberries to the tops of each pancake for flavor. It will make for a sweet surprise when you bite into your finished product! After this, you can begin to move your cakes onto a separate dish. Be careful as these will be very hot!

Serve with maple syrup or honey along with a few scoops of fresh fruit! A blend of strawberries and raspberries would be tasty too! Choose your favorites and be creative!

Don’t those look incredible?! Super simple and quick to make, it took me no time at all to whip these up in the kitchen. This recipe makes for a wonderful Fall breakfast in the morning and I’m so happy with the way they turned out! What’s your favorite breakfast food?! I wanna know! Decorating For Fall And Gifting With JORD + Giveaway

This past weekend I decided I wanted to spice up my front porch and living space. It’s October which means pumpkin season is in full blast and we all said goodbye to September. Isn’t this year just flying by?! To gear up for the trick-or-treaters this year and in an effort to just make my home look adorable – I headed on over to a local patch and managed to grab some cuties! I picked up some mums, little pumpkins, and some larger pumpkins for variety! The porch looks great now!

But pumpkins aren’t the only thing giving me life this season. My JORD watch made an appearance too! Eeeee guys I just can’t rave enough about my Frankie series timepiece! Crafted out of 100% natural, hand-finished woods, JORD works hard to create incredible watches for both men and women. My favorite has been the dark sandalwood and smoke colors that mesh perfectly with the warm, natural, shades of Fall. It’s simple, elegant, and yet so freshly different!

I even got my watch engraved with a special message! Feel like your gift to a loved one is missing something? Try sharing a heart-felt message like I did on the backing plate of your own new JORD watch! This option is also available on their storing boxes (which in my opinion are just as detailed and as gorgeous as the watches themselves)! To make my watch more meaningful, I engraved my husband and I’s initials with our wedding date. It’s such a treat to see it each time I put it on as a remembrance of us! Love, love, love! Quite literally! Did I already say I love this company?!

Weekly Fall Favorites

Maple Pecan Latte – Starbucks & Dunkin

I’m a pumpkin spice girl during this time of year, don’t get me wrong. It’s just, the flavors of Fall are calling and they want me to try! One of those flavors is the Maple Pecan Latte from Starbs. This speciality latte is flavored with a sauce rather than a syrup and is sweet but not overpowering! The drink has a strong maple taste but gets balanced with the notes of pecans. I’ve only tried this iced at Starbucks so I can’t vouch whether or not the hot version is just as great. Pick one up for yourself and let me know how it is!

Ole Henriksen Wonderfeel Double Cleanser

I’ve always neglected my skin in the past and haven’t paid much attention to newer skin care products. Up until recently, I never knew there was a need for it! I just assumed my face was as good as it was gonna get and there wasn’t a thing I could do about what I didn’t like.

“But first, skin care”

I was never extremely unfortunate with my skin though. I’ve considerably been very lucky! Rather than struggling with acne or blemishes I’d regularly experience dryness, occasional blackheads, and redness. Nothing a little foundation and concealer couldn’t fix right? Wrong. I’ve come to the conclusion now that there are so many great products out in the world geared towards my specific problem areas. Things I never knew existed!

One of those products (and my personal favorite) is this Ole Henriksen Wonderfeel Double Cleanser. This little guy is made for removing make up, hydration, and of course cleansing. An added bonus, it’s great for people with sensitive skin – the texture is light weight and creamy which makes it perfect for massaging into the cheeks, chin, neck, and under eyes.

I use it both in the morning when I’m getting ready to put make up on my face and at night when I’m preparing to take it off. It leaves me feeling refreshed every time no matter what. It’s becoming quite the necessity in my daily routine.

Biking

“When in doubt, pedal it out”

Going to the gym everyday has been a habit of mine lately. I’m super committed to changing my lifestyle drastically and the gym is the way I’ve been doing that. Specifically, with cardio. Typically, you can find me on the treadmill or elliptical and occasionally using the weight machines (I’m still new at this so bear with me). But recently I’ve been loving the bike! I’ve been doing 20 minute workouts with intervals. Meaning I’ll go hardcore on a high level for 5 minutes and switch back to a lower level up until my time is up. It keeps my heart rate going and acts as a game I try to beat! Feels like I’m at my own soul cycle in a way! Lol.

So what are your Fall favorites this week?! Let me know in the comments!
